Za’atar Meatballs with Tzatziki

Ingredients

For the Tzatziki:

  • 1 cup plain low fat greek yogurt

  • 1/2 cucumber, cut into small cubes

  • 1 garlic clove, minced

  • Juice of 1/2 a lemon

  • 1 tablespoon fresh dill, chopped

  • Salt and pepper to taste

For the Meatballs:

  • 16 ozs ground chicken

  • 2 cloves garlic, minced

  • 1 small yellow onion, diced

  • 2 tablespoons fresh parsley, chopped

  • 2 tablespoons za’atar

  • Salt and pepper

Directions

For the tzatziki, mix all ingredients together in a bowl. Set aside

For the meatballs, mix all ingredients together in a bowl. Form into 8 meatballs. Bake in 400 degree oven for 20 minutes, or until the inside meat temperature reaches 165 degrees.

Serve the meatballs over a schmear of hummus, with a side of tomato-cucumber salad (dressed with olive oil, salt, and pepper), and a dollop of tzatziki.
