Cottage Cheese Rolls

I was on the hunt for a high protein bread recipe that I could make a turkey sandwich on and nailed it with these 5-ingredient cottage cheese rolls! All you need are eggs, cottage cheese, and oats (plus salt and baking powder). Just blend the ingredients, portion out, bake, and you’ve got warm, fluffy rolls that are packed with protein and fiber. They’re perfect as a quick dinner side, as toast with eggs or avocado or for your favorite lunchtime sandwich. Simple, wholesome, and delicious – you’ll love how easy these rolls are to make!

Ingredients

Makes 6 medium sized rolls

  • 3 eggs

  • 3 cups rolled oats

  • 1 heaping cup of cottage cheese

  • 1 tspn salt

  • 1/2 tspn baking powder

  • Optional: sesame seeds, poppy seeds, everything seasoning or any other toppings

Directions

  1. Add the rolled oats to a blender and blend until mostly fine (its ok if there are chunkier oats).

  2. Add the remaining ingredients and blend until well combined.

  3. Portion out the dough onto a parchment lined baking sheet. Top with whatever seasonings you like, if you prefer.

  4. Bake at 400 degrees for 20 minutes.

  5. Remove and let cool.
