Peanut Butter Cup Protein Bars

YA’LL, I am shook over these protein bars. Peanut butter + chocolate are my number one combination so to nail a recipe that brings the two together and packs the protein punch has my mind blown. I will eat one of these a day for the rest of my life, yes there, I said it. I look forward to “snack o’clock” daily just so that I can savor every single bite of this delicious, healthy snack. Run, don’t walk: you need these now.

Ingredients

Makes 10 bars

  • 1 cup peanut butter

  • 50g protein powder

  • 1 cup coconut flour

  • 1/4 cup maple syrup

  • 3 tbspns milk (any kind is fine; can also just use water)

  • 50g dark chocolate chips

  • 1 tbspn coconut oil

Directions

  1. Mix the peanut butter, protein powder, coconut flour, milk and maple syrup together. Stir well until a dough forms.

  2. Press the dough into a parchment lined 9X12 inch baking dish.

  3. Melt the chocolate chips with the coconut oil in the microwave. Pour over the dough.

  4. Freeze until the top shell is hard. Slice and serve.
