Whipped Cottage Cheese Pesto Pizza

Makes 2 pizzas

Ingredients

For the pesto:

  • 5 ounces of cottage cheese

  • 1.25 ounces of basil

  • 2 tspns garlic powder

  • 2 tspns onion powder

  • 1 tbspn olive oil

  • 1 tbspn nutritional yeast

  • Salt and pepper to taste

For the pizza:

  • Two Banza chickpea pizza crusts (package comes with two)

  • 2 zucchini, sliced thin and roasted

  • 2 handfuls of spinach

  • Cottage cheese pesto

Directions

To make the pesto, blend all ingredients until smooth.

To make the pizza, generously cover the pizza crusts with the pesto. Bake in an oven set to 400 degrees for about 8 minutes. Remove and add the zucchini and spinach and bake again for about 5 minutes, until the crust is golden and the spinach is wilted. Remove and top with nutritional yeast.
