Green Goddess Tofu Bowls

I love a clean, healthy bowl with a variety of flavors and textures. The sauce is the key to tying it all together and this yogurt-based green goddess dressing nails it. Made with fresh herbs, its light and bright and incredibly versatile: over a salad, as a chicken marinade, or to liven up your summer pasta salad.

Ingredients

For the sauce:

  • 10 ounces plain Greek non-fat yogurt

  • 1/2 cup parsley

  • 1/4 cup chives

  • Juice of half a lemon

  • 1 teaspoon garlic powder

  • Salt and pepper to taste

For the bowl:

  • 1/2 cup cooked white quinoa

  • 1 cup roasted carrots (or whatever veggies you have on hand)

  • 1/2 cup canned chickpeas, rinsed

  • 2 cups spinach

  • 8 ounces extra firm tofu, baked

  • Microgreens

Directions

Makes two bowls.

  • To make the sauce, blend all ingredients together until smooth.

  • Compose your bowls, dividing the ingredients into two. Top with the sauce and microgreens.
