Cottage Cheese Pancakes
Makes 8 Pancakes
Ingredients
1 Cup Rolled Oats
1 Cup of Cottage Cheese (we like Good Culture)
2 Eggs
2 Teaspoons of Cinnamon
2 Teaspoons Baking Powder
1 Teaspoon Vanilla Extract
1 Tablespoon of Maple Syrup
Directions
Blend all ingredients together until you get a smooth batter.
Heat a griddle on medium-high and coat with coconut oil.
Spoon batter onto the griddle. Flip and cook.
Serve warm with butter, maple syrup, and/or fresh fruit
