Cottage Cheese Pancakes

Makes 8 Pancakes

Ingredients

  • 1 Cup Rolled Oats

  • 1 Cup of Cottage Cheese (we like Good Culture)

  • 2 Eggs

  • 2 Teaspoons of Cinnamon

  • 2 Teaspoons Baking Powder

  • 1 Teaspoon Vanilla Extract

  • 1 Tablespoon of Maple Syrup

Directions

  1. Blend all ingredients together until you get a smooth batter.

  2. Heat a griddle on medium-high and coat with coconut oil.

  3. Spoon batter onto the griddle. Flip and cook.

  4. Serve warm with butter, maple syrup, and/or fresh fruit
