Taco Salad Bowl with Cilantro Lime Dressing

Ingredients
For the dressing (make 8 servings)
1/2 bunch cilantro
Juice of 1 lime
2 cloves garlic
1 tablespoon maple syrup
1/4 cup olive oil
1/4 cup water
Salt and pepper to taste
For the meat crumbles (makes enough for 4 salads)
1 package of lean ground turkey
1 packet of Siete Foods taco seasoning (mild)
For the bowls (makes two salads)
1 bag romaine lettuce
1 red pepper, cut into strips
12 cherry tomatoes, cut in half
1/2 cucumber, peeled and sliced
2 tablespoons of pumpkin seeds
1/4 cup shredded cheddar cheese
1 avocado, divided in half and sliced
Cilantro for garnish
Directions
To make the dressing, add all ingredients to a blender and pulse until creamy and smooth.
To make the meat crumbles, heat a pan with avocado oil to medium-high. Mix the turkey with the taco seasoning and then add to the pan. Break the meat up into small pieces, stirring the meat as you do. Cover and cook until done.
To assemble the salads, grab two bowls and divide the lettuce in half. Add the red bell peppers, tomatoes, cucumbers, cheese, avocado and pumpkin seeds to the bowls. Then add 1/4 of the meat crumbles to each bowl and top with the dressing.
