Cottage Cheese Egg Bake

Ingredients

  • 9 medium organic eggs

  • 1 cup low fat cottage cheese

  • 1/2 cup grated cheddar

  • 1 cup spinach

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • Pinch of salt and fresh cracked pepper

  • Red pepper flakes

Directions

  1. Add the eggs to the bowl and beat until fully broken down and combined.

  2. Whisk in the cottage cheese.

  3. Add the spices and cheese and stir.

  4. Fold in the spinach.

  5. Grease a 13” X 9” baking dish with avocado oil and pour in the mixture. Sprinkle on the red pepper flakes.

  6. Bake at 375 degrees for ~20 minutes or until a toothpick comes clean.
