Vanilla Matcha Protein Balls

Oh my goodness are these vanilla matcha protein balls GOOD.

I am always on the go, bouncing from meeting to kid pick up to [insert all the places]. I really wanted a protein-packed snack that I could take with me and this recipe did not disappoint. They are perfectly sweet, light and fluffy, and so flavorful. Your challenge will be to not eat them all at once.

Vanilla Matcha Protein Balls

Ingredients

  • 1 cup almond flour

  • 1/4 cup coconut flour

  • 1/4 cup vanilla protein powder (I love Ascent Vanilla Whey Protein Powder)

  • 1 tbspn matcha powder

  • 1/4 cup maple syrup

  • 1/3 cup almond butter

  • 1 tspn vanilla extract

Directions

  1. Mix all of the ingredients together to form a doughy ball. If the mixture is too dry, add a little bit more maple syrup.

  2. Break the dough into 10 sections and roll each into a ball.

  3. Refrigerate.
