Ingredients
Makes 2 individual servings
1/2 cup cottage cheese
1 egg
1 big scoop of vanilla protein (~50g)
1 tspn vanilla extract
1/4 cup blueberries (+ more for topping)
Dollop of full fat vanilla Icelandic yogurt
Directions
Add the cottage cheese, egg, protein powder, vanilla extract and blueberries to a blender. Blend until smooth.
Pour the mixture into coconut oil-greased ramekins.
Bake in the oven at 350 degrees for about 15-20 minutes, or until the top is set.
Remove and top with a dollop of yogurt and some extra blueberries. Eat warm!
