Blueberry cottage cheesecake breakfast bake

Ingredients

Makes 2 individual servings

  • 1/2 cup cottage cheese

  • 1 egg

  • 1 big scoop of vanilla protein (~50g)

  • 1 tspn vanilla extract

  • 1/4 cup blueberries (+ more for topping)

  • Dollop of full fat vanilla Icelandic yogurt

Directions

  1. Add the cottage cheese, egg, protein powder, vanilla extract and blueberries to a blender. Blend until smooth.

  2. Pour the mixture into coconut oil-greased ramekins.

  3. Bake in the oven at 350 degrees for about 15-20 minutes, or until the top is set.

  4. Remove and top with a dollop of yogurt and some extra blueberries. Eat warm!
