Salmon Salad Toast

I loveeeeeee salmon — it’s in my regular rotation and I look forward to it every week. I usually eat it the same way: broiled, with a miso glaze, served over cauliflower mash with sauteed chard or spinach (so easy, recipe coming soon).

But today I did something different. I had a piece of leftover salmon that was just begging for a lunch time glow up. And ya’ll, the result did not disappoint. This salmon salad toast is hearty, healthy, and so dang good. I can hardly call this a recipe, as its literally a few household ingredients. Give it a try and let me know what you think!

Salmon Salad Toast

Serves 1

Ingredients

  • 1 4 ounce piece of salmon, cooked

  • 2 tablespoons pre-made pesto (I love Gotham Greens vegan pesto)

  • 2 pieces of sourdough, multigrain or gluten free bread

  • Microgreens to garnish

Directions

  • Toast the bread

  • Mix the salmon in a bowl with the pesto; serve on top of the toast and garnish with greens
