Grain-Free Granola

I’ve been making this grain-free, nut-based granola for years and it hasn’t gotten old. It’s perfectly crunchy, just the right amount of sweet, and tastes oh-so-good over yogurt, chia pudding or with your favorite milk, some berries, and a drizzle of almond butter. Sure, you could pay $10 for a similarly clean granola that lasts you 3 days max, or you could make this and have enough to last your family two weeks at the same cost. I think you’ll have your answer once you give this a try!

Grain-Free Granola

Serves *many :)

Ingredients

  • 2 cups slices almonds

  • 2 cups pecan pieces

  • 2 cups pumpkin seeds

  • 2 cups walnut pieces

  • 1 egg white

  • 1/4 cup maple syrup

  • 1 tbspn coconut oil, melted

  • 1 tbspn cinnamon

  • 1 tsp ground ginger

  • 1 tsp vanilla

  • 1 tsp salt

Directions

  • Combine all ingredients in a bowl and mix well to coat nuts so they are wet

  • Place in a thick 1/2 inch layer on parchment covered baking sheet so the nuts are very close together.

  • Bake at 350 degrees for 15-18 minutes or until golden

  • Let cool completely, then break into chunks. Store in an airtight bag or tupperware.
